Easy toddler meals are a must, especially with twins.

Today I have three easy toddler meals to share with you, all of which include hidden veggies for those picky eaters.
I am bringing these meals to you alongside my favorite Kroger grocery chains, QFC and Fred Meyer.
Why?
Well, for starters, you know they are my favorite go to grocery stores. I have shared plenty about them in the past and my love for their one stop shopping experience with everything I need.
But also because they recently launched a variety of Simple Truth Plant Based foods and we are loving them!
They make for the perfect backbone to my favorite easy toddler meals like the three pasta ones I have for you today.

Especially as a young family who are learning new ways to eat better all the way around.

With their new launch came two varieties of plant based pasta sauce, as well as two varieties of plant based sausage. Just what I needed to make up a couple dinners that the twins would love and I would feel good about!
The first of which I call a Hidden Cauliflower “Chicken” Alfredo.
For this yummy meal you’ll need:
- Simple Truth Plant Based Alfredo Sauce
- One Box Simple Truth Pasta
- One Package Simple Truth Frozen Cauliflower
- One Package frozen Simple Truth “Chicken” Strips
Now comes the easiest set up you’ve ever seen for an easy toddler meal with hidden veggies.
Simply cook the pasta and “chicken” strips instructed on the box, and while they’re cooking heat up the frozen cauliflower for one minute in the microwave. Then in a blender, combine the cauliflower and Simple Truth Plant Based Alfredo Sauce. Blend it until smooth, then stick in a pot on the stove to heat up.
To serve, chop up the “chicken” strips into bite sized pieces and combine with the sauce and pasta. Mix it up, add a spoonful to your toddlers plate and let them gobble it up!
Next we have a Chorizo Red Pepper Pasta
This sounds spicy, but trust me, it was good!
Here is what you will need:
- Simple Truth Plant-Based Bolognese Sauce
- One Package of Simple Truth Pasta
- One Red Pepper
- One Package Simple Truth Plant-Based Meatless Chorizo Sausage
You’re going to start by chopping up the sausages into bite sized pieces. From there, get them on the stove with a bit of olive oil and cook until the sides start to brown. In the mean time, you’ll get started on your pasta and hidden veggie sauce.
Cook the pasta directed on the box, and while it’s cooking, chop up your red pepper into chunks, toss the seeds and throw into your blender. From there, add in the Simple Truth Plant Based Bolognese Sauce and blend until smooth!
Once blended up, stick the sauce in a pot to warm up on the stove. Or in a bowl to microwave. There is no judgement here. The goal is to simply get dinner on the table!
Once everything is cooked up, throw it all together in a large bowl, toss and serve!
Now for the last of the easy toddler meals, I have a Quick Meatless Kielbasa Alfredo.
Here is what you’ll need to grab:
- Simple Truth Plant-Based Meatless Kielbasa Sausage
- Simple Truth Plant Based Alfredo Sauce
- One Package Simple Truth Pasta
- One Package Simple Truth Frozen Cauliflower
To make up this meal, you’ll combine the methods from the two earlier easy toddler meals by starting with chopping up and cooking the sausage with a bit of olive oil, then start the pasta. Then you’ll heat up the frozen cauliflower for a minute in the microwave before blending it up with your Simple Truth Plant Based Alfredo Sauce.
Once everything is cooked and warmed, you’ll add it all to a large bowl, mix it up, and serve!
Pretty simple, huh?
