The season of crockpot meals is amongst us, ladies.
Back to school, fall, laziness, whatever it may be. This time of year is IT!
I love mixing up new recipes in my crockpot, however, something I have recently decided to dive into is freezer prep crockpot dinners.
I know, I know. I’m way late to the game. I’m sitting here shaking my head at myself.
My twins are a whole year old now, and I am JUST getting around to freezer prep crockpot meals?! JEEZ.
I could have been spending so much time doing other things.
Meal prep is something that I have always shot for, but never succeeded at. One week I will be on it and chop up all my veggies for the week, prep my husbands lunches as well as my own. Then others six pm rolls around each day and I haven’t thought about dinner once.
It’s all about balance?
Anyways. I hope to actually stick with it this time because after about a half hour of meal planning, then about 45 minutes of freezer meal prepping, I am done with dinners for the week. All I have to do now is stick them in the crockpot after breakfast in the morning and maybe make up some rice to go with later that night.
If I was really on it, I could even prep all of the rice and noodles I need for the week! But in all honestly I don’t have that much room in my fridge so I will still have to make that part of dinner in the evening.
Still beats having to make up all of dinner with two angsty babies!
Okay that is all I have to share with you guys. I know you are strictly here for the freezer meal prep.

Five Freezer Prep Crockpot Chicken Meals
The five freezer prep crockpot meals are;
- BBQ Chicken (perfect for pulled chicken sandwiches or bbq tacos!)
- Teriyaki Chicken (serve with rice and add some pineapple for a sweet addition!)
- Creamy Italian Chicken (serve over rice or noodles)
- Tex Mex Chicken (serve in tacos, or make into a yummy nacho dish with some melted cheese!)
- Creamy Chicken Stew (serve with rolls or over rice)
All of my recipes are pretty basic so that you can add your own spin to them. Such as pineapple to the teriyaki chicken, or some beer/coca cola to the BBQ chicken.
Feel free to make the recipes your own!
Bbq Chicken
- 3 chicken breasts
- 1 small onion
- 3 cloves garlic, minced
- 2 tsp paprika
- 2 tsp salt
- 1 tsp black pepper
- 1 bottle BBQ sauce ( I like spicy bbq sauce in this!)
Place chicken in crock pot, followed by ingredients in order of list.
If going in freezer, add all ingredients to the bag and zip closed. Then mash everything together between your fingers.
Cook on low for 6-8 hours from frozen, or 4-6 hours with fresh meat.
Shred for chicken sandwiches, top salads, create shredded bbq chicken tacos.
Teriyaki Chicken
- 3 chicken breasts (or about six boneless thighs)
- Small yellow onion
- 3 cloves garlic, minced
- ½ cup soy sauce
- ½ cup honey
- ¼ rice vinegar
- ¼ tsp pepper
- 2 tbs grated ginger
- ¼ water
- 2 tbs cornstarch
Place chicken in crock pot followed by onion and garlic. Stir together soy sauce, honey, rice vinegar, pepper and ginger. Top chicken with mixture.
If going in the freezer, chop up chicken into bite sized pieces, pour in ingredients and seal, then mash together with hands.
Cook on low for 6-8 hours if frozen, 3-4 hours if fresh.
Once done cooking, dice chicken if not done already and add sauce from crock pot into a sauce pan over medium high heat and cook until the mixture is reduced by half. Mix together water and cornstarch in the meantime (this is an unnecessary step. You can absolutely serve with sauce from crockpot without cooking it down).
Whisk in water mixture and mix until thickened, then turn off heat.
Serve with rice and cooked veggies. Add pineapple for a sweet addition.
Can be topped with red pepper flakes, sesame seeds, and scallions.
Creamy Italian Chicken
- Three chicken breasts
- Two cans of cream of chicken (can sub for other ‘cream’ soups)
- Italian seasoning packet (or search how to make your own!)
- Package of cream cheese
Place chicken in crockpot
Mix together remaining ingredients in a bowl
Top chicken with mixture
If freezing, add chicken to zip lock then add in the mixture. Squish mixture around chicken with your hands after the bag is sealed.
Cook on low for 6-8 hours if frozen or 3-4 hours if fresh.
Serve over noodles or rice alongside cooked veggies or fresh salad.
Tex Mex Chicken Tacos
- 3 chicken breasts
- 16 oz salsa
- 2 cans of beans (drained and rinsed)
- 1 can of corn (drained and rinsed)
- 1 package of taco seasoning (or about 3 tbs taco seasoning from jar)
Add chicken to crock pot
Top with ingredients
If freezing, place all ingredients in zip lock then seal. Mash mixture with fingers to mix up.
Cook on low for 6-8 hours if frozen, or 3-4 if fresh.
Serve as tacos/burritos, over rice, or on top of chips for nachos!
Creamy Chicken Stew
- 3 chicken breasts
- 6 red potatoes diced
- Package of baby carrots
- 1 can cream of chicken (or other cream soup)
- 1 package of cream cheese
- Italian seasoning packet (or ranch packet)
- ½ milk or water
Place chicken in crock pot and top with ingredients in order of list
If freezing, you know the drill. Seal bag with ingredients and mash up with hands.
Cook on low for 6-8 hours if frozen, or 4-6 if fresh
Serve topped with fresh parsley and biscuits, or on its own with a side salad.
