Pumpkin AND caramel? Yeah. Count me in.
Something about the blend of the two flavors, along with the traditional pumpkin spice mixed in is just heavenly!
Caramel pumpkin spice coffee cake is definitely my new pumpkin spice favorite. Which is why I think it is the perfect ending to my pumpkin spice recipe train.
Over the last couple weeks I have shared my hands down favorite pumpkin recipes with you guys and I am so happy that you were here to stick along for it! Now, the recipes aren’t going anywhere. But with Halloween right around the corner, and then the holidays right afterwards, I have some awesome content coming up for you guys.
But today, we’ll stick to pumpkin.
So when I was taking these bars out of the oven, I swear the twins could tell. They were taking a nap and once I had set the pan down on top of the stove, I heard them waking up. Coincidence? Or they just actually smell that heavenly? LOL!
Caramel might sound like an odd ingredient to add into the pumpkin spice mix. But I think it turned out perfectly!
Now, you can’t taste much caramel per say. It doesn’t jump out at you. But if you have eaten hundreds of pumpkin spice goodies like I have, you can tell a distinct difference between this recipe with added in caramel syrup, and a traditional pumpkin bread recipe.
It is a lot more moist and flavorful. But I can talk about the flavor all day long. The only way for you to really know is to get to the store and grab some pumpkin and caramel sauce to make the caramel pumpkin spice coffee cake for yourself!

Caramel Pumpkin Spice Coffee Cake

- 1/2 cup oil
- 2 large Eggs
- 1 can pumpkin puree (15 oz)
- 1/3 cup caramel syrup
- 1/2 cup White Sugar
- 1/2 cup brown sugar
- 2 cups flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/2 stick softened butter
- 3/4 cup flour
- 1/3 cup White Sugar
- 1 tsp cinnamon

- Start by pre-heating your oven to 350 and greasing a 9x13 baking dish
- Add all wet ingredients to a large mixing bowl and combine
- Add sugars to wet mixture and mix
- Sift the rest of the ingredients into the wet mixture and fold until combined
- Add all crumb ingredients to a small bowl and combine with fingers
- Pour pumpkin mixture into greased baking dish then swirl some caramel sauce over top
- Finally, spread the crumbs over the top of the mixture and stick in the oven for about 30 minutes, or until you can pull a clean knife out of the center
- Let sit for at least ten minutes before slicing and serving
