The sun has FINALLY popped out here in the pacific north west and MAN am I happy!
Why do I love the sunny weather? Well because it gives me the PERFECT excuse to make some of my favorite meals-
Pasta Salads!
So when I was doing my weekly “uhhhhh what should we have for lunch and dinner this week” browsing on Pinterest, I found the awesome idea of a sun dried tomato pasta salad!
I found this recipe from JoyfulHomemaking.com’s Margo, and was DROOLING!
Eager to make it, I remembered I had some sun dried tomato pesto left over from a previous dinner so I decided to incorporate that instead of the sun dried tomatoes.
So I grabbed a few extra things I needed from the grocery store and got cooking!
Everything was looking awesome during the process, but we all know what really matters is the taste.
Once I had the meal put together, I stuck it in the fridge for about an hour to give it a good chance to marinate and chill before taking a bite.
Let me just tell you- that first bite was so good that I had to share it with you guys right away. That is right, I made this meal about an hour ago and I am here sharing it with you now because I just COULDN’T wait!
It is the perfect pasta salad for the sunny days we have ahead! What’s even better?
It is perfect for meal prepping to make lunch easy! I don’t know about you, but my life is crazy during the week with my twins! So having some Snapware in the fridge with delicious lunches ALREADY made is great!

- 1 Box Dried Pasta I used penne
- 3 TBS Sun dried tomato pesto
- 1/2 cup Feta
- 1 small can sliced olives
- 2 Handfuls shredded arugula
- 1/2 container sliced cherry tomatoes
- 1 drizzle olive oil
- 2 tsp Italian seasoning
Ingredients

- Start a large pot of water on the stove, bring to a boil
- Add box of pasta to boiling water and reduce to medium heat
- While pasta cooks, slice tomatoes and hand shred arugula then set aside
- Once pasta is cooked (about 12 minutes), drain in sink and rinse with cool water
- Add cooled pasta to a large mixing bowl
- Add the rest of the ingredients to the bowl and mix until combined
- Chill for a minimum of one hour before serving for optimal flavor
Don't be afraid to mix in some shredded chicken or diced salami for even more yummyness!
