WOW! This post has gained so much traction lately, which is a huge surprise since it was one of my first posts ever published here on Twins and Coffee.
So I’ve decided to give it a bit of an update because it was a very poorly done post. But the recipe will stay the same, don’t worry. I’ve seen you all sharing it all across Pinterest and sharing your recreations. I am loving it! It’s become a very popular simple banana bread muffin recipe on Pinterest.
It’s really strange to think back to when I first published this post. I knew nothing about this whole blogging thing and was just dipping my toes in while struggling with my mental health postpartum.
I used Twins and Coffee as an outlet back then to connect with other twin moms struggling with the same things I was, and since then it has evolved into a huge platform for encouraging new moms to embrace the season and value their worth.
I’ll leave it at that though. You’re probably not here to learn the life story of Twins and Coffee. Just looking for a bomb ass simple banana bread muffins recipe.
And for that, I can deliver.
The Key to Making the Best Banana Bread Muffins
These simple banana bread muffins are my family go to any time we have some bananas that have sat on the counter for too long.
I’ve made them time and time again since I first published this post in 2017.
They’re moist, packed with flavor, and include a little secret ingredient. Nutmeg!
I really think the ground nutmeg is what ties all of the ingredients together and makes for such a rich banana bread muffin.
The following recipe is all you need to impress your family with your culinary skills, but if you’re looking to go the extra mile, try some add-ins like a 1/4 cup of sour cream for even more richness, chocolate chips for the sweet tooth, or coconut shreds for “not your mamas banana bread”.

How to Make Simple Banana Bread Muffins
First, you need your ingredients.
Simple Banana Bread Muffins Ingredients:
- 3 medium bananas (the more ripe, the better!)
- 1 large egg
- 1 tsp vanilla
- 1/2 cup oil
- 1 1/2 cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 cup sugar
- 1/3 cup brown sugar
- 1 tbsp cinnamon
- 1 pinch nutmeg
First Step:
Combine all of your wet ingredients in a medium sized bowl (or large if you’re going for a one bowl batch).

Your mixture should look like this once all mashed together. I suggest leaving a mix of big and small chunks of banana for premium flavor.

Second Step:
Add all of your dry ingedients into a larger bowl (but the recipe also works if you simply combine everything in one bowl to begin with).

Third Step:
Combine bowls/mix everything together. Mix until just combined.
Fourth Step:
Using a 1/4 c measuring cup, scoop out the banana bread muffin mixture into a prepped muffin tin. I simply spray the muffin tin, but you can also use cupcake wrappers.
Fifth Step:
Bake at 350 degrees for 12-15 minutes. You’ll know the muffins are ready when the tops spring back up once tapped.
Then let cool and enjoy!
Like I mentioned above, you can take this simple banana bread muffin recipe a step further by adding in things like coconut flakes, chocolate chips, walnuts, or even a cream cheese swirl.
To make a cream cheese swirl, simply combine some softened cream cheese, powdered sugar, heavy whipping cream, and vanilla in a bowl and mix well with a hand mixer or whisk. From there, add a dolop into your muffin mix once it’s in the tin and swirl with a knife for the swirled in effect. Super simple!

- Fold the wet mixture into the dry mixture.
- Scoop the mixture into the greased muffin pan
- Bake for 12-15 minutes. Muffins will be done when you can press on the top and it springs right back.
- Cool in pan for ten minutes, then transfer to plate for eating

-1/3c oil
-1/4c brown sugar
-1tsp vanilla
-2c oats

All you have to do is add all of the ingredients to your blender then blend on low power for 2-3 minutes. Pour into a greased pan & bake at 350 for about 27-30 minutes. If you’re making muffins, bake at 350 for 13-15 minutes.

I have made these four times! Since my husband is diabetic, I substituted Splenda and Brown Sugar Splenda. They turned out terrific! Such an easy and tasty recipe!
