Is there anything more fall than pumpkin spice?
I mean, the Starbucks PSL launch each year seems to be when people signify fall beginning, even though fall doesn’t really start for another month following the launch!
So what better way to kick off the start of fall than with some pumpkin spice bars? My personal favorite are pumpkin spice chocolate chip blondie bars.
I make them every year at the start of fall, and they are gone before the weekend is over! This was the first season with the twins joining in the pumpkin spice baking and they were very helpful. Ya know, banging pots and pans while mama bakes.
That is all of the help I need!
They also enjoyed their own little pumpkin spice bars after they cooled down enough for toddler munching. Where as for me, I took a bite basically right out of the oven. These things are that good.
If you are ready for your home to smell like a dream, and to lose all self control, get your butt to the store and grab some canned pumpkin and chocolate chips and get to baking!

- 2 sticks room temp butter
- 3/4 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 TBS Vanilla Extract
- 1 can pumpkin puree
- 2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp ground cloves
- 3/4 bag chocolate chips save a bit to sprinkle on top

- Preheat oven to 350 and grease a 9x13 baking pan
- In a large mixing bowl, fluff room temp butter until nice and fluffy. You'll notice the yellow color fading. That is optimal.
- Once butter is fluffed, add in both sugars and mix until creamy.
- Add in egg, vanilla extract and pumpkin puree. Mix until fully combined.
- Place sifter on top of bowl, fill with flour, baking soda and spices. Sift atop the wet pumpkin mixture.
- Fold in the flour mixture until fully combined.
- Add in the chocolate chips and fold in until just combined
- Pour mixture into baking dish and spread out evenly. Sprinkle extra chocolate chips on top.
- Bake at 350 for about 20 minutes, check for doneness, replace for another five minutes if needed. My current oven took about 22 minutes for the inside to still be a little doughy and soft. If you want your bars extra done, go the full 25.
- Let cool for about 10 minutes prior to slicing and serving. Serve on their own, or with whipped cream or ice cream!
Not interested in bars? Transform the recipe to make up pumpkin spice chocolate chip muffins! The recipe should yield approx. 15 standard sized muffins.
