Keeping on with Pumpkin Spice Saturdays, I am bringing you recipe number two.
We are bringing pumpkin spice to the breakfast table.
No, not in latte form. We are making pumpkin spice french toast sticks.
Best part?? They are a toddler friendly breakfast option!

It is basically the cycling meal menu in our home.
But back to the pumpkin spice.
I never thought about making pumpkin spice into a breakfast option. To me, it is much more of a dessert flavor. Or coffee. Sometimes.
Secret? I am not a PSL fan. It doesn’t match well with coffee IMO. But it does match very well with french toast!
I found that adding the pumpkin and spices into my regular french toast recipe made the meal come out super indulgent.
Like, I could easily eat the entire batch. And the batch made about 15 slices, or 60 pumpkin spice french toast sticks. OOPS!
They’re just too good! But that is what this month is for. I am sharing with you guys my absolute hands-down BEST pumpkin spice recipes!

Pumpkin Spice French Toast Sticks

- 15 slices bread
- 4 large Eggs
- 3/4 cup milk
- 1/2 cup pumpkin puree
- 2 tsp vanilla
- 1 tsp cinnamon
- 1 tsp pumpkin spice blend
Ingredients

- First off, slice your bread into fours. I sliced each piece individually in order to not squish the bread.
- Next up, blend all remaining ingredients together in large enough dish to submerge the sliced bread.
- Heat your griddle to about medium high and add a bit of butter to melt and help the sticks not stick.
- Submerge the bread slices into the pumpkin egg mixture one at a time. Make sure fully coated before placing on heated griddle.
- Load up griddle with the coated bread slices. Cook for about 2 1/2 minutes on each side.
- Repeat process until all sticks are cooked.
- Enjoy with by dipping into syrup, or on their own!
