Have you put together any savory pumpkin dinner recipes before? I know most of us correlate pumpkin with all things pumpkin spice, but there are quite a few pumpkin dinner recipes that knock it out of the park.
This post is sponsored by Fred Meyer, however, all opinions made are mine alone.
Yes, Pumpkin for Dinner
Are you a pumpkin spice lover? I’m not a huge fan. But I can absolutely get behind some pumpkin-y dinner recipes. I hadn’t considered pumpkin as anything more than a dessert ingredient until last year when I came across some pumpkin soup. It had tender pumpkin chunks throughout and even though I hadn’t tried the recipe before, it gave me a sense of comfort.
Pumpkin adds a warm and cozy comfort to any meal it is blended into. Plus- is there anything better than the smell of warm pumpkin floating through your home? No. No there is not!
How to Cook with Pumpkin
If you’re going to be putting together any of these pumpkin recipes, you should first get familiar with cooking a pumpkin. If you’ve cooked any kind of squash before, you’ll have it down right away.
The best tip for cooking pumpkins: ALWAYS use cooking/pie pumpkins. I know it seems so much easier to just grab the first pumpkin you see, but trust me. Most carving pumpkins do not taste good at all. You need the pumpkins marked for cooking if you want that great pumpkin flavor.
This post from Christina’s Cucina dives into the specifics of cooking pumpkin a variety of ways and will answer any Q’s you have!
Where to Buy Cooking Pumpkins
I always get my pie pumpkins from Fred Meyer. Their produce tables are always fully stocked and I can leave with enough pie pumpkins to make up my many holiday pie recipes, as well as any and all pumpkin dinner recipes I want to put together!
While you’re browsing their produce selections, keep an eye out for some of the new varieties from Simple Truth and Private Selection. I can’t wait to use their new Private Selection™ Campari Tomatoes for some parmesan roasted tomatoes this holiday season.
