Thanksgiving in 2020
I am beyond happy that the holiday season is here. This entire year has been a rollercoaster for just about everyone and we have been in desperate need of some holiday cheer. If you’ve been following along on Instagram, you know I’ve been in a full-force Christmas season mindset for a few weeks now. BUT! Don’t get me wrong.
I love Thanksgiving.
But you know that calendar meme that has gone around? This one?
That is me. I love Thanksgiving but it’s all the Holiday Season in my eyes.
To me- the whole season is an excuse to eat all of the wonderful Thanksgiving-ish meals and I have a NEW one for you that I bet you haven’t tried before.

Honestly, I’m surprised I hadn’t thought about putting something like this together with a Thanksgiving spin earlier. My two favorite things in one? Yes please.
But the idea came to me this year while I was asking my friends on Instagram what their holiday plans were. I got so many responses of mamas not so sure about what they would be doing. Mostly because no one was certain where we would be at with the virus outbreak come Thanksgiving time. With the uncertainty in mind, I wanted to put together some sort of meal idea that would limit waste.
As much as I love a big Thanksgiving Holiday dinner, the big meal would make for a lot of waste for many of us this year. So I wanted to figure some sort of middle ground where we could enjoy the same Thanksgiving recipes, but on a much smaller scale.
In comes the sheet pan thanksgiving dinner idea!
My sheet pan Thanksgiving dinner can be put together & table ready in under an hour. Yep. Less than an hour and you will have some Thanksgiving dinner goodness on your plate.
Honestly, this recipe would make for a great dinner idea year-round. I don’t know about you, but I always get cravings throughout the year for a good holiday dinner but absolutely no part of me wants to spend two days prepping and cooking to meet it.
But a sheet pan thanksgiving dinner?
Yeah, I can handle that anytime!
Putting together the thanksgiving sheet pan dinner
The hardest part about putting together my Thanksgiving sheet pan dinner was deciding what I would feature. I knew I would include turkey breast, but as for the sides, I was a bit stuck!
I ended up sitting on it for a bit before deciding on featuring a sourdough-like, garlic & herb stuffing, classic diced sweet potatoes, and rosemary garlic carrots alongside the turkey breasts. After deciding on the sides, I quickly put together my ingredient lists and popped on over to fredmeyer.com to begin adding items to my Clicklist cart.
Ya’ll have to know by now that my go-to for grocery shopping is Fred Meyer or QFC & their Clicklist option. Ever since the twins were born I have been putting in my weekly orders enjoying the convenience of essentially grocery shopping from my kitchen while making my twins breakfast before heading to pick up the order later in the day.
I love that I can always trust that I will be getting the best quality products even without having to go into the store. I know you’re probably just going to scroll through to the recipe, but let me give you a few tips before you do.
Tips for Making a Sheet Pan Thanksgiving Dinner
- Use a LARGE sheet pan. You can use a smaller one, but obviously more will fit on a bigger one. Mine is nearly as large as my oven.
- Double up the foil layers on the pan for a NO MESS experience.
- Make up little foil boxes for the sweet potatoes and stuffing to keep juices from mingling while cooking.
- Oil up both sides of the turkey breast before covering in the butter & herb mixture for ultra moist and delicious turkey breast.
- Dice the sweet potato into small chunks in order to be fully cooked within the baking time.
- Cover the turkey breast with foil for half of the cooking time to prevent moisture loss.

Sheet Pan Thanksgiving Dinner
Make this flavorful small family sheet pan Thanksgiving dinner in under an hour and thank me later.
Ingredients
Turkey
- 2-3 Turkey Breast Halves/Slices
- 4 TBSP Room Temp Private Selection Garlic, Parmesan, Basil Butter
- 1 TBSP Minced Garlic
- Fresh Simple Truth Poultry Herb Blend (rosemary, sage, thyme)
- Olive Oil
Sourdough Stuffing
- One Loaf of Simple Truth Roasted Garlic Artisan Bread, diced
- One Egg
- 4 TBSP Melted Salted Butter
- 1 TBSP Minced Garlic
- Fresh Simple Truth Poultry Herb Blend (rosemary, sage, thyme)
- 1/2 Cup Diced Celery
- 1/4 Cup Diced Onion
- 1/2 - 1 Cup of Simple Truth Vegetable Broth
Diced Candied Sweet Potatoes
- 1 - 2 Sweet Potatoes, peeled and diced
- Olive Oil
- 3 TBSP Simple Truth Brown Sugar
- Handful of Marshmallows
Rosemary Garlic Carrots
- One Package of Simple Truth Baby Carrots
- Olive Oil
- 1 TBSP Minced Garlic
- Fresh Simple Truth Rosemary
Instructions
Prep Your Pan:
Prep by turning the oven to 425 degrees and double line your baking sheet with foil. Make two rectangle foil boats for the stuffing and sweet potatoes and set them aside.
Garlic Herb Turkey Breast:
- In a small bowl, combine butter, garlic, and herbs.
- Pour some olive oil on one portion of the baking sheet and then rub both sides of your turkey breasts with oil before laying them down on the sheet.
- Top each turkey breast piece with some of the butter & herb mixture.
- Stick the baking sheet in the fridge before moving onto the next step.
Sourdough Stuffing:
- Dice your Simple Truth Rosemary Loaf and place all pieces into a large mixing bowl.
- Top the diced bread with all other ingredients EXCEPT the Simple Truth vegetable broth.
- Combine all ingredients.
- Pour in 1/2 cup of Simple Truth vegetable broth and mix. If not yet fully saturated, add a bit more of the broth until all of the bread mixture is saturated.
- Grease one of the foil rectangle boats and pour in the entirety of the stuffing mixture and set aside.
Candied Diced Sweet Potatoes:
- Dice your sweet potato(es) very small and pour it into a medium-sized mixing bowl.
- Add in your brown sugar and some olive oil (just enough to coat the diced chunks) and mix.
- Grease the remaining foil rectangle boat and pour the diced sweet potatoes into it.
- Top with a handful of mini marshmallows and set aside.
Garlic Rosemary Carrots:
- In a large bowl, combine the baby carrots, some olive oil, minced garlic, and fresh rosemary.
- Pour onto the opposite side of the sheet pan from the turkey breasts.
Baking:
- Place the foil boats in the middle of the baking sheet.
- Place the baking sheet in the oven for 15 minutes.
- After 15 minutes, use a wooden spoon to mix around the sweet potatoes and carrots.
- Bake for another ten minutes.
- Make sure all is fork-tender before pulling out of the oven.
Let sit for 10 minutes before plating and enjoy!

Ari Fryer Apple Pies
Put together these easy and tasty air fryer apple pies in under 10 minutes & serve with some whipped cream or vanilla ice cream for the ultimate apple pie experience.
Ingredients
- 6 gluten-free soft taco tortillas
- 1 can (20 oz.) Kroger® Apple Pie Filling
- 2 tablespoons butter, melted
- 3 tablespoons sugar
- 1/2 teaspoon ground cinnamon
Instructions
1. Heat air fryer to 400°F.
2. Evenly divide apple pie filling between tortillas, placing just off center.
3. Tuck in the ends of each tortilla and roll up tightly around the filling.
