Pumpkin Spice

Looking for an easy way to fill up the kiddos or yourself first thing in the morning? You need these chocolate chip pumpkin spice energy bites. They are packed with flavor and all of the good stuff, making them a fall snack no-brainer.

Ingredients:

– 2 cups Simple Truth Rolled Oats – 1/4 cup Simple Truth Flax Seed – 1/4 cup shredded coconut – 1/2 cup Simple Truth Creamy Peanut Butter – 1/2 cup Simple Truth Honey – 1/4 cup Simple Truth Pumpkin Puree – 1/4 cup mini chocolate chips – 2 tsp pumpkin spice

Step #1:

Combine all ingredients in a large glass bowl.

Step #2:

Cover a baking sheet or cooling rack with parchment paper.

Step #3:

Using a mini cookie scoop (or a spoon), grab out a small bit of the mixture, roll into a ball, and place on parchment paper (my balls were about an inch in diameter).

Step #4:

Repeat until all of the mix is used up.

Step #5:

Stick in the fridge for 30 minutes to firm up, or enjoy right away!
