This tasty pumpkin spice baked granola is packed with flavor, chocolate chips, and shredded coconut. It makes for the perfect fall breakfast partner alongside some vanilla greek yogurt.
– 2 cups Simple Truth Rolled Oats – 1/2 cup brown sugar – 2 TBS Simple Truth Flax Seed – 1/2 cup Simple Truth Shredded Coconut – 1/4 cup mini chocolate chips – 1/3 cup Simple Truth Pumpkin Puree – 1/3 cup Simple Truth Honey – 1 tsp vanilla extract – 2 tsp pumpkin spice
Preheat oven to 350
In a large bowl, combine all dry ingredients.
In a smaller bowl, combine all wet ingredients.
Combine wet and dry ingredients.
Pour mixture onto a greased baking sheet and press out with fingers into a thin layer spanning sheet pan.
Bake for 15-20 minutes, or until golden brown and firm to the touch.
Let cool completely and once cooled, chop and break up the granola into bite sized chunks.
Eat on its own, in snack mixes, or on top of greek yogurt.
