Pumpkin Spice is the Flavor of Fall!
Are you a PSL girl or nah? I am NOT. The only way I like my pumpkin spice is in snacks and desserts! But none the less, fall is my favorite season and I always kick it off with a good baking session!
There are a few things that make fall feel like fall to me. Things like digging out my comfy sweaters, crisp morning walks with my babies and a tasty coffee, as well as heading to Fred Meyer to grab some blooming mum plants along with what I need for getting my fall baking underway!
I usually do all of my fall and holiday shopping at Fred Meyer because I love checking out what their Simple Truth brand is launching. They are constantly rolling out tasty new foods and fall is no exception (seriously though, check out their vegetarian/vegan options). The Simple Truth canned pumpkin puree is one of my favorites to bake with!
Recently I also started taking advantage of their bulk selection in an attempt to become more sustainable and I was very happy to see that the bulk section is kept very clean with a packed selection of dry ingredients.
As someone who bakes a TON throughout the season, my shopping lists looks a bit like this:
- 2 Blooming Potted Mums
- 6-10 mini pumpkins from produce for adding some decoration to the house
- 4-6 cans of Simple Truth Pumpkin Puree
- Simple Truth Flour (I usually snag a GF variety or two before the season picks up as well)
- Simple Truth Sugars (their coconut sugar is my FAVE for making your own salted caramel iced coffees!)
- Simple Truth Rolled Oats
- & Simple Truth Dark Chocolate Chunks

Easy Pumpkin Spice Fall Recipes
Before you can dive into the recipes, you gotta put together your pumpkin spice! You could buy a pre-made spice jar, however, I love the taste of homemade pumpkin spice!
To put the pumpkin spice together, you’re going to need 2 parts of cinnamon, 1 part ginger, and 1/4 parts of both nutmeg and ground cloves. Simple Truth offers a huge selection of Organic spices, including all you’ll need for the fall season of baking!
Now as for the recipes, here are my four favorite easy fall pumpkin spice recipes!
1. Pumpkin Spice Caramel Apple Bites
Pumpkin Spice Caramel Apple Bites
My pumpkin spice caramel apple bites make for a delicious fall afternoon snack to enjoy with the kiddos that take under five minutes to prepare.
Ingredients
- 3-4 apples of your choice
- Medium bowl half way filled with cold water
- Lemon juice
- Jar of Kroger caramel sauce topping
- Fall sprinkles
- Mini popsicle sticks
Instructions
Step 1: Peel and chop up apples.
Skip to step number 5. if you are enjoying the apples right away.
Step 2: Place apple chunks into the bowl of cold water and add some lemon juice (I do not use measurements for this, it's simply a bath to prevent the apples from going brown).
Step 3: Let apple chunks rest in lemon water for 30 minutes.
Step 4: Remove apple chunks from lemon water and pat dry.
Step 5: Gently push mini popsicle sticks into the apple chunks and place on platter.
Step 6: Pour caramel sauce into a glass bowl and mix in 2 tsp of pumpkin spice.
Step 7: Pour some festive sprinkles into a small glass dish.
Step 8: Serve apple bites on a platter with the caramel sauce and sprinkles.
Enjoy!
Pumpkin Spice Puppy Chow Snack Mix
Pumpkin Spice Puppy Chow Fall Snack Mix
Muddy buddies are a holiday favorite of my family, and this year I decided to kick off the muddy buddy season early with some pumpkin spice muddy buddies! Or Puppy chow. Whatever you call the white chocolate and powdered sugar-covered Chex cereal! Get the how-to for the pumpkin spice puppy chow, along with the how-to on the fall snack mix now!
Ingredients
- 2 cups Chex cereal
- 1 block of Simple Truth White Baking Chocolate
- 1/2 cup of powdered sugar
- 2 tsp pumpkin spice
Optional snack mix adds
- Simple Truth Kettle Corn
- Simple Truth Pretzels
- Simple Truth Yogurt Covered Raisins
- Reeses Pieces Candy
Instructions
- Add two cups of Chex cereal to a large glass bowl.
- Chop up baking chocolate and stick in a small microwave-safe bowl along with a drop of oil (I used coconut oil).
- Heat at 15-second intervals until completely melted.
- Pour on top of cereal and mix
- Pour 1/2 cup of powdered sugar on top of the cereal mix and combine.
- Eat on its own, or add in suggested snacks to make a full-on fall snack mix!
Store in an airtight container.
Pumpkin Spice baked Granola
Pumpkin Spice Baked Granola
This tasty pumpkin spice baked granola is packed with flavor, chocolate chips, and shredded coconut. It makes for the perfect fall breakfast partner alongside some vanilla greek yogurt.
Ingredients
- 2 cups Simple Truth Rolled Oats
- 1/2 cup brown sugar
- 2 TBS Simple Truth Flax Seed
- 1/2 cup Simple Truth Shredded Coconut
- 1/4 cup mini chocolate chips
- 1/3 cup Simple Truth Pumpkin Puree
- 1/3 cup Simple Truth Honey
- 1 tsp vanilla extract
- 2 tsp pumpkin spice
Instructions
- Preheat oven to 350
- In a large bowl, combine all dry ingredients.
- In a smaller bowl, combine all wet ingredients.
- Combine wet and dry ingredients.
- Pour mixture onto greased baking sheet and press out with fingers into a thin layer spanning sheet pan.
- Bake for 15-20 minutes, or until golden brown and firm to the touch.
- Let cool completely.
- Once cooled, chop and break up the granola into bite sized chunks.
- Eat on its own, in snack mixes, or on top of greek yogurt.
Store in an airtight container.
Chocolate Chip Pumpkin Spice Energy Bites
Chocolate Chip Pumpkin Spice Energy Bites
Looking for an easy way to fill up the kiddos or yourself first thing in the morning? You need these chocolate chip pumpkin spice energy bites. They are packed with flavor and all of the good stuff, making them a fall snack no-brainer.
Ingredients
- 2 cups Simple Truth Rolled Oats
- 1/4 cup Simple Truth Flax Seed
- 1/4 cup shredded coconut
- 1/2 cup Simple Truth Creamy Peanut Butter
- 1/2 cup Simple Truth Honey
- 1/4 cup Simple Truth Pumpkin Puree
- 1/4 cup mini chocolate cips
- 2 tsp pumpkin spice
Instructions
- Combine all ingredients in a large glass bowl.
- Cover a baking sheet or cooling rack with parchment paper.
- Using a mini cookie scoop (or a spoon), grab out a small bit of the mixture, roll into a ball, and place on parchment paper (my balls were about an inch in diameter).
- Repeat until all of the mix is used up.
- Stick in the fridge for 30 minutes to firm up, or enjoy right away!
Store in an airtight container and keep in the fridge.
