What’s something you can never go wrong with?
Tacos.
We eat so many tacos in my house, however, that I decided to switch it up this week and create a tasty black bean taco salad instead.
What I love most about taco night is how simple it is. Taco ingredients are a staple in my home. We always have beans, cheese, veggies, sour cream and salsa. With those ingredients we make a load of different dinners- but mostly tacos.
Probably because they are the quickest meal to whip up!
But I decided to change things up ultimately to get some use of the black beans in the pantry. We are moving soon and I am trying to cook with all of the food we have on hand so that we don’t have to move so much of it.
Trying to do so is forcing me to create a lot of new meals! On the list this week are a lot of vegetarian meals in order to use up the various beans I have supposedly collected over time.

Back to the salad.
I wanted to keep this black bean taco salad quick and simple. So I opted to keep it vegetarian and not add in the cooking of meat and all that. But the addition of some seasoned, cubed chicken would work perfectly in this salad!
For the black bean taco salad, I stuck with six easy ingredients aside from the dressing. But all in all- the salad only takes about 15 minutes to prepare.
Perfect for the busy summer nights ahead! Or just the simple nights you don’t want to spend in the kitchen.
Literally all it takes is chopping up some lettuce, red bell pepper, avocado and some cheese if you didn’t purchase shredded to begin with. Then drain a can of black beans and throw everything in a large bowl along with some fresh or frozen corn.
Then to whip up the dressing, all you have to do is drop some salsa, sour cream and taco seasoning in a food processor and pulse a few times until creamy.
Pour that over the salad and mix!
So simple that even the kids can help out!
We are watching a friends daughter a few nights a week, and she loves helping out in the kitchen. She helped create this salad by using a butter knife to dice up the avocado as well as toss the salad together.
She had a blast helping put it together!
Before you get started- make sure you have what you need kitchen wise as well!

- 2 Cups Chopped Lettuce
- 1 Can Black Beans Drained
- 1/2 of Red Bell Pepper Diced
- 1/2 Cup shredded cheese
- 2 Medium Avocados Diced
- 1/2 Cup Corn Fresh or frozen
- 1/2 Cup Salsa
- 1/2 Cup sour cream
- 1 TBS taco seasoning

Dressing

- Chop up lettuce and place in large mixing bowl
- Dice bell pepper and avocado then place on top of lettuce
- Add in corn, shredded cheese, and drained beans
- Add sour cream, salsa and taco seasoning to food processor
- Pulse until combined and creamy
- Top salad with dressing and mix
- Serve with tortilla chips
